Peach Upside Down Cake and Celebrating Milestones

My rockstar not only weaned herself in May, she even potty trained herself this June.

Ingredients

One night.

Process:

The toddler throws a big tantrum and throws the diaper on the floor. “Mujhe NAHI pehennaa Pam Pam!” (I don’t WANT to wear a Pam Pam) and hoes to sleep after hours of parentals trying to convince her to wear a diaper and eventually succumbing to a child in a panty, hiccuping herself to sleep.

Zero accidents that night. A few accidents the following day that too because she wanted to enact the action a boy does in one of the potty training books when he has a pee accident. Knees together, feet outwards. Literally for artistic value.

A couple of weeks in, we are still going strong. Knock on wood.

I HAD to celebrate.

Was craving making a cake with fruit and with the gorgeous ones in this season I couldn’t take my eyes off the peaches.

Okay that’s a lie. They were sitting there, wrinkling a little more every day so I put them to good use before they went bad.

Found this lovely recipe for a moist cake. Replaced the brown sugar with Gur (Jaggery) got the top of the cake (it bottom when baking).

It was Sooo Lovely with tea.

Also got Sassi a wooden rainbow from One Earth to placate her forever obsession with rainbows.

(I think I will be making one in her room later this year).

Here I was, thinking I’ll put up a nice post explaining our journey through potty training but just the way she was conceived (in two days. DAYS!) she also potty trained.

Clearly she’s in a hurry with a ton of things to do in life and I can’t wait to see her do them all.

All I did with her was I never obsessed over training her. Like I usually say, potty training isn’t literally training. It is a physical and psychological milestone which just happens when it’s time.

You try to rush it and you will face accidents, rebellion, recurring regression because your child was not physically ready for this.

Between the age of 3-4, children are supposed to regulate themselves on their own. I wanted to experience it myself and see how true these claims are and here you go.

Now for the fantastic cake that we chomped down because our child saved us SO MUCH TROUBLE.

I came across this recipe a little while ago and was dying to try it. I made some changes in there like the sugar type and the flavour (I used vanilla, it suggested almond) etc. For the original recipe please go to An Italian In My Kitchen.

PEACH UPSIDE DOWN CAKE

Ingredients

BOTTOM LAYER

• 1/4 cup butter (softened) (56 grams)

• 1/2 cup + 1 tablespoon brown sugar (lightly packed) (112.50 grams) (I used Gur/ Jaggery)

• 23 slices of peaches (3 or 4 peaches or 1 small can drained)

CAKE LAYER

• 1/4 cup butter (56 grams)

• 1/2 cup white sugar (100 grams)

• 1/4 teaspoon vanilla flavouring

• 1 egg

• 1 cup cake flour ** (115 grams)

• 1 1/2 teaspoons baking powder

• 1/4 teaspoon salt

• 1/4 cup + 2 tablespoons milk (80 grams)

Instructions

• Pre-Heat oven to 350°F (180°C),  grease and flour an 7-8 inch (20 centimeter) spring form cake pan (springform because the sides are higher, line with parchment paper if you wish).

BOTTOM LAYER

• On the bottom of cake pan place softened butter add brown sugar and mix well, spread evenly, lightly press peach slices into the mixture.

CAKE LAYER

• In a bowl mix together flour, baking powder and salt.

• In another bowl cream butter, sugar and vanilla essence, add egg and beat until light and fluffy, add dry ingredients alternately with milk, beat on low until combined.

• Spoon and spread evenly over peach slices.  Bake for approximately 40-45 minutes.  Let cool 5 minutes and then flip onto a cake plate, serve warm, with a scoop of vanilla ice cream if desired.  Enjoy!

• **to make Cake flour, place one cup of all purpose flour in a bowl, remove 2 tablespoons and replace with 2 tablespoons of corn starch. Whisk well to combine.
