If you’ve been following my blog long enough, you’d know we have recently been exposed to the scorching London Summers where we had run away to escape the crazy Lahore Summers. Not much respite I guess.
With all of this came a new entrant to my baby’s life. The love of ice cream and I cant be happier.
a) It’s usually milk intake
b) It’s calorie dense so a little goes a long way
c) She’s happy through it all so it doesn’t even seem like a good option.
Ice cream for babies is where the line between food and play blurs. I usually only go for Haagen Dazs or Ben & Jerry’s, ones that actually have real milk or other ingredients like fruit etc but this one fine day, a predicament led us to some experimenting and a pleasant surprise.
It was a hot afternoon and we had run out of ice cream. There was only half a small single serve cup of raspberry sorbet in the freezer which my baby polished off and then was preparing to throw a tantrum at when I actually had a (once in a blue moon) epiphany.
It’s sorbet.
How tough could it be?
So I scoured my refrigerator.
We had plenty of peaches. Around 5 or 6 of them plonked in the freezer too! These were my target.
So here’s the recipe.
– 5-6 Ripe peaches. Peeled and Sliced and frozen until firm. Like not rock hard but not lijlijaa or pilpilaa (Okay. Just firm.)
– 3/4 cup of sugar and equal amounts of water
– 1 teaspoon lemon juice
– a pinch of salt.
Stir sugar in water until dissolved.
Pull out the firm peaches and add the sugar syrup, salt and lemon juice and blend it until creamy and smooth. If it gets too runny stick it in the freezer for just a smidge and it’ll be just fine.
Stays lovely in the freezer for a while too.
You can do this with ANY pulpy fruit. Whether it’s frozen blueberries, strawberries, mangoes or any citrusy fruits with pith and seeds removed. Really looking forward to oranges with Kaala Namak!
Which reminds me. I did throw together a treat for myself since the blender was down from the shelf where I can’t usually reach it.
Threw together lemon juice, 5-6 ice cubes, some Kaala Namak and dollops of castor sugar.
